Hot pot is the only cuisine where the customer cooks

A hot pot restaurant serves a pot of simmering broth set into the table, and then raw food. Thin-sliced meat, leaf vegetables, mushrooms, tofu, noodles — everything arrives uncooked, and each person cooks their own, a few seconds at a time, for as long as they want to sit there.

That changes what a restaurant is. The kitchen prepares almost nothing; it slices, arranges and sends things out. The meal has no courses and no end — it finishes when people stop ordering. And because everyone is reaching into the same pot, nobody eats alone or in silence.

The divided pot is the detail worth knowing. Chinese hot pot is frequently served in a vessel split into two chambers by an S-shaped partition — the yuanyang, named for the mandarin duck, a bird that pairs for life and whose male and female look entirely different. One side is fiery Sichuan broth, the other mild. Nobody has to negotiate.

It solves the problem every shared meal has, and it does it with a piece of metal rather than a conversation.
