The hydrangea tells you what your soil is made of

It is the one common garden plant that works as a chemical test, and the colour in this set is a choice somebody made.

A hydrangea's flowers turn blue in acid soil and pink in alkaline soil, and the mechanism is aluminium. In acid ground below about pH 5.5, aluminium dissolves and the roots can take it up; it binds with a pigment in the flower and shifts it to blue. In neutral or chalky soil the aluminium stays locked in the ground, the pigment is unaltered, and the same plant flowers pink.

The same bush, moved to a different garden, changes colour. Gardeners who want blue add aluminium sulphate or grow them in ericaceous compost; gardeners who want pink add lime. Nothing about the plant's genetics is involved, which is why a nursery label promising blue flowers is a promise about your soil rather than about the shrub.

White hydrangeas are the exception — they lack the pigment entirely and stay white whatever you do.
