Police dogs are frequently commanded in German
A dog working with an American, British or Australian police force is quite likely being given orders in German or Dutch, and there are two reasons for it.
The first is where the dogs come from. The breeds used for police work — the German Shepherd, the Belgian Malinois, the Dutch Shepherd, the Rottweiler — were developed in Germany, Belgium and the Netherlands, along with the training systems that go with them. A force buying a trained adult dog is buying one that already knows a vocabulary, and retraining that is expensive and pointless.
The second is practical. A dog that responds to "sit" responds to anyone in earshot saying it. A dog that responds to Sitz, Platz, Fass and Aus responds only to the handler — and in a situation with a crowd, a suspect and a great deal of shouting, that matters enormously.
It is not a secret language, and anyone who looks the words up can say them. But nobody does it by accident, which is the whole point.
Agility is not the job, it is the foundation
The ramps and obstacles in this set are not tricks. A working dog has to follow a handler over walls, through windows, up stairs, across grating and along narrow ledges — surfaces most dogs refuse. Agility work teaches confidence on unfamiliar footing long before any of the real work begins.
