The Dominion built its soldiers addicted

The Jem'Hadar were not recruited or conquered. They were engineered — grown in birthing chambers, reaching adult size in three days, bred for nothing but fighting.

And the Founders built into them a dependency they could not escape. The Jem'Hadar cannot produce a particular enzyme their bodies need, so they require regular doses of a drug called ketracel-white, which only the Dominion supplies. Withdrawal kills them, and it takes days.

That single design decision is the whole Dominion. There is no need for loyalty, no need for discipline in the ordinary sense, and no possibility of desertion — a Jem'Hadar who walks away dies within the week. The white is issued by a Vorta officer, and the ritual of distributing it appears in the series again and again.

It also makes the Dominion's soldiers its most obvious weakness, and Deep Space Nine spends a good deal of its later run exploring exactly that.

The ship

Jem'Hadar vessels follow the same logic as their crews. The design is purely functional — no comfort, minimal crew accommodation, and in the smaller classes no shields at all, on the reasoning that a ship which cannot be defended should simply be replaced. They were built to be expendable, by a power that could make more of everything.
